Rooibos is an herbal plant, grown only in South Africa. Though technically not a tea (true tea is derived only from the Camellia sinensis plant), the oxidized leaves from the rooibos plant are commonly referred to as Rooibos tea and consumed as such. LEMPENG BAWANG ...........

 





Ingredients :

1 egg
1/2 cup fresh milk
1/2 cup water (maybe more)
1/2 teaspoon salt
1 cup flour
1/4 teaspoon baking powder
1/2 Holland onion - sliced thinly
Olive oil

Method :


1. Whisk egg in a bowl. Add in fresh milk, water and salt. Mix thoroughly.
2. Add flour and baking powder. Mix well to form thin batter.
3. Add in onion and stir to mix.
4. Heat a non stick skillet. Add a bit of olive oil.
5. Pour some batter on the skillet and using the back of the spoon to spread batter into a round.
6. Cook until surface of pancake changes color, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.
7. Serve with chicken curry or anything to your liking.

Cream Puffs ..........

Cream Puffs



Ingredients:

Choux Pastry:
1 stick butter (8 tablespoons or half cup)
1 cup water
1/4 teaspoon salt
4 eggs
1 cup all-purpose flour


Method:
  1. Put butter and and water into saucepan on low heat. Turn off the heat once butter has melted.
  2. Add in flour and salt. Stir quickly until a dough is formed and does not stick to the saucepan.
  3. Leave to cool for about 10-15 minutes.
  4. Beat in eggs one at a time using a electonic mixer (low speed) until mixture is stiff.
  5. Using an ice cream scoop or teaspoon, scoop the dough onto a greased baking sheet.
  6. Bake in a preheated oven at 190 Celcius for 10 minutes. Reduce temperature to 170 Celcius and bake for another 15 minutes.
  7. Turn off the heat. Leave the puffs to cool in the oven for another 20-30 minutes.
Crème Pâtissière (Filling)


Ingredients:
1 cup milk (236ml)
2 egg yolks
1/4 cup caster sugar (55g)
1 drop vanilla extract
2 tablespoon corn starch
1 pinch salt (only if not adding butter, or using unsalted butter)
1/2 tsp unsalted butter, for additional shine and firmness


Method:
  1. Add yolks, 1/4 cup milk, vanilla beans, salt, corn starch in a bowl.
  2. Bring the remaining 3/4 cup milk to a scald in a saucepan. Pour the hot milk in small stream into the egg mixture, whisking consistently with a balloon whisk as  you pour. Once incorporated, pour everything back into the saucepan.
  3. Whisk the mixture over over medium heat until it thickens and firm up. Remove the heat and whisk in butter.
  4. Once it reaches room temperature, scoop the creme into a piping bag or container. Refrigerate until ready to use.
  5. To make the cream puffs, use a small nozzle and attach it to the piping bag. Insert the nozzle into the choux pastry and pipe the creme into the puff.

Tandoori Chicken ..........

 Tandoori Chicken



Ingredients:
4 lbs chicken whole legs (2 piece, with drumsticks and thighs), bone-in and skin removed
Tandoori Spice Blend
Yogurt Paste
onions, tomatoes, thinly sliced (optional)
romaine lettuce, cut into bite-size pieces (optional)


Tandoori Spice Blend Ingredients:
1/2 tablespoon garam masala (store bought)
3/4 teaspoon red chili powder or cayenne pepper (as per taste)
1/2 tablespoon paprika
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon turmeric powder


Yogurt Paste:
2 cloves garlic, peeled and minced
1-inch ginger, peeled and minced
1/2 cup plain yogurt, lightly whipped
1/4 cup butter, ghee or oil (lightly warmed)
2 tablespoons rice vinegar or lemon juice
2 teaspoons salt (or as per taste)
pinch of red coloring or saffron (optional


Method:
1. In a skillet, lightly toast the Spice Blend ingredients for a quick 2 minutes or until fragrant. In a large bowl, make the Yogurt Paste, add in all the toasted Spice Blend, mix well and set aside.
2. Clean and pat dry the chicken legs. With a knife, make 3-4 deep slits on parts of the chicken, front and back. Coat chicken with blended Tandoori Spice paste, making sure extra marination goes into the slits of the chicken. Marinade for 4-6 hours, preferably overnight.
3. Preheat oven to 375 degree Fahrenheit. Line the baking sheet with aluminum foil and place the broiler rack over it. Place the whole rack in the oven for 10 minutes.
4. Remove rack from the oven, place marinated chicken legs in the oven and bake for 45 minutes. Flip the chicken half way, and baste it with extra marinade and continue baking.  Reserve juice in the baking sheet, if any and pour juice over the chicken, cool down/refrigerate until ready for grill.
5. Turn broiler oven or grill to High for 5-10 minutes. Cut the whole legs into 8 equal pieces and arrange them onto the grilling rack. Broil for 5-7 minutes on each side until the chicken is lightly charred and completely cooked.
6. Remove from oven, and ready to serve with a bed of fresh salad, Naan bread or Raita.

Lemon Chicken ........



Lemon Chicken



Serves 2 | Prep Time: 20 Minutes | Cook Time: 10 Minutes


Ingredients:
10 oz (300g) skinless, boneless chicken breast/thigh, cut into small pieces
1/4 cup corn starch plus 1/4 cup all-purpose flour, sifted and combined well
Oil, for deep-frying
1/2 teaspoon white sesame


Marinade:
1/2 tablespoon soy sauce
1 tablespoon corn starch


 Sauce:
3 tablespoons lemon juice
2 teaspoons sugar
5 tablespoons water
1 teaspoon corn starch
Pinch of salt, or to taste


Method:
Marinate the chicken with the Marinade, for 30 minutes.
Mix all the ingredients for the Sauce. Set aside.
Coat the marinated chicken with the corn starch and all-purpose flour mixture.
Heat up a wok with about two inches of oil. As soon as the oil is fully heated, deep-fry the chicken until golden brown.
Transfer the chicken out to a dish lined with paper towels to sock up the excess oil.
Add all the ingredients in the Sauce into a small sauce pan and bring it to a quick boil.
Transfer the fried chicken into the sauce, stir to coat well with the lemon sauce.
Dish out, top with the white sesame, and serve immediately.

RAINBOW CHIFFON CAKE ........

 



Ingredients :
Egg yolk batter:


6 egg yolks
50 g sugar
60g corn oil
60g coconut milk
1/4 teaspoon pandan essence
110 g self-raising four

Food coloring :

Few drops yellow colouring
Few drops pink colouring (I added strawberry essence)
Few drops green coloring (I added pandan essence)

Egg white foam :

6 egg whites
¼ tsp Cream of tartar
70g sugar


Method :

1. Preheat oven to 170C.
2. To make egg yolk batter : Combine egg yolks, sugar, oil and coconut milk in a mixing bowl. Fold in flour until forms batter.
3. Divide batter into 3 portions. Add in different colour and essence separately, mix until well blended.
4. To make egg white foam : Beat egg whites and cream of tartar until foamy, gradually add in sugar, beat at high speed until frothy and stiff peaks.
5. Divide egg white foam into 3 portions. Gently fold into egg yolk batter separately, mix until well blended.
6. Pour each of colour batter mixture into ungreased 23cm tube pan by sequence.
7. Bake in for 40 - 50 minutes or until cooked.
8. Once baked, turn your chiffon pan upside down and leave to cool. Remove from pan, slice and serve.

Kueh Dorayaki .....

Bahan-bahan:

100gm tepung kek atau tepung gandum
½ sudu teh baking soda
60gram gula halus
2 sudu madu2 biji telur
½ sudu minyak masak
½ sudu teh esen vanilla
Sedikit marjerin/ mentega / minyak masak

Inti:

kacang merah yg manis/ kaya

Cara Penyediaan:

Masukkan telur dan gula dalam mangkuk besar, pukul sehingga kembang.
Masukkan madu, minyak dan esen vanilla. Kacau hingga mesra. 

Ayak tepung bersama baking soda dan masukkan ke dalam campuran telur. Kacau adunan secara kaup balik (tambah sedikit susu cair jika adunan terlalu pekat).

Panaskan marjerin/ mentega / minyak masak atas kuali leper dengan api kecil.Tuang suku cawan adunan, buat bulatan berdiameter 10cm. 

Masakkan bahagaian bawah sehingga berwarna perang, balikkan untuk masak sebelah atas pula sehingga adunan nampak masak. Ulang sampai habis (20 keping).

Letak 1 sudu besar kacang merah / kaya ditengah sekeping kuih, tutup dgn satu keping kuih. Tekan dengan tangan pelahan-lahan untuk meratakan kacang merah / kaya. 

Sedia untuk dihidangkan.

~ Bahulu kukus ~




 


 

BAHAN BAHAN;

- 250 gm tpg gandum
- 4 biji telur
- 200 gm gula halus
-  1 sdt esen vanilla
-  1sdt overlet
-  150 ml santan
-  sedikit pewarna kuning


CARA MEMBUATNYA:

-pukul telur dgn gula,overlet,hingga kembang dan pekat.

-kemudian masukkan tepung sedikit-sedikit dgn santan (selangselikan).

-warnakan

-perap 1/2 jam -1 jam

-kemudian sudukan dlm acuan bahulu dan kukus 10-15 minit.
